Sucrose is a simple carbohydrate. A disaccharide composed of glucose and fructose, which is used for a variety of applications. It is isolated from cane sugar; it is not synthetic.

Sucrose can be used to prepare density gradients for cell/organelle separation. The refractive index of the solution will be directly related to the density. In addition, sucrose can be used as a supplement in plant, insect, and bacterial culture media. It can also be used in various enzymatic assays.

Soluble in water (1 g/0,5 ml at 25 °C; 1 g/0,2 ml boiling water), ethanol (1 g/170 ml) or methanol (1 g/100 ml); moderately soluble in glycerol or pyridine.
